No-Bake Coconut Cookies Recipe

Serves: 18 cookies
  • 2 ½ cups gluten-free quick oats
  • 1 cup unsweetened, flaked coconut
  • ⅔ cup raw honey
  • ½ cup unrefined coconut oil
  • 1 cup almond butter
  • 1 tbsp whole flaxseeds
  • 2 tsp vanilla extract
  • 6 tbsp dark cocoa powder
  • Coconut sugar - sprinkle on top
  • Himalayan pink salt - sprinkle on top
  1. Line two baking sheets with parchment paper.
  2. In a large bowl, thoroughly mix the coconut flakes and oats.
  3. In a medium pot over medium heat, combine the honey, coconut oil and almond butter and stir until the mixture is melted and mixed evenly.
  4. Remove from heat and add the oats and coconut flakes, stirring continuously.
  5. Add the flax seeds, vanilla extract and cocoa powder and continue stirring until mixture becomes thick.
  6. Scoop out large tablespoons of the mixture and place on the cookie sheets.
  7. Lightly sprinkle coconut sugar and sea salt on top of each cookie.
  8. Freeze the cookies for at least 20 minutes (or when you are ready to serve).
  9. Take the cookies out of the freezer to thaw for 5 minutes.
  10. Share and enjoy (store any leftover cookies in a sealed container in the freezer)!
