Kale Beet Salad Recipe
Recipe type: Salad
  • 1 bunch of kale, destemmed and shredded or finely diced
  • 2 raw beets, peeled and shredded
  • 3 carrots, shredded
  • 1 cup of blueberries
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons pure maple syrup
  • The juice of a whole lime or half of a lemon
  • Salt and pepper to taste
  1. In a large mixing or serving bowl, toss the kale, beets, carrots and blueberries together.
  2. In a smaller bowl, mix together the olive oil, the syrup, the lemon or lime juice and the salt and pepper.
  3. Pour the oil mixture over the kale mixture and continue to toss until all of the kale mixture is evenly coated.
  4. Cover and let sit for at least one hour, but we prefer this salad best when it is allowed to sit in the refrigerator overnight.
