Coconut Cream Mashed Potatoes
  • 4 red potatoes, cooked, peeled and cubed
  • ½ cup canned coconut milk (BPA-free)
  • 1 tbsp coconut butter or ghee
  • Sea salt and black pepper to taste
  1. Melt coconut butter or ghee in a small saucepan and then add the coconut milk.
  2. Stir until there is a slight boil and set aside.
  3. In a large bowl, add all the remaining ingredients with the coconut milk/butter or ghee mixture.
  4. Use a hand masher or an electric hand beater to mash the potatoes and mix well. Add a little more coconut creamer and coconut spread to achieve the consistency desired.
