“Zamen Zoodle” Soup: Your HEALITHER Ramen Alternative (Gluten FREE & Vegetarian)

Some people say they have a “spirit animal.”

Well, I love animals and all… but I also LOVE to eat!

Therefore, I’m pretty sure I have a “spirit food” – and that food is noodle soup.

Each bite gives you a warm hug from the inside and fills your stomach with happiness.

However, the popular and cheap instant ramen is oozing with icky ingredients that makes it a ticking time bomb of destruction when it enters your body (here is what ramen noodle companies don’t want you to know).

Make your own HEALTHY and easily digestible version of ramen by swapping out traditional ramen noodles for ZOODLES (zucchini noodles).

Health Benefits Of Zamen Zoodle Soup

  • Contains vitamin A, magnesium, folate, potassium, copper and phosphorus
  • Full of fiber
  • Can help you lose weight, low in calories, but gives you a “full” feeling
Mixed Veggies
  • Carrot: Contains antiseptic and antibacterial abilities that make it ideal for boosting the immune system, rich source of vitamin C and dietary fiber, helps with digestion  
  • Spinach: Contains a wide variety of phytonutrients with anti-inflammatory and anticancer properties
  • Kale: One of the most nutrient dense foods, packed with antioxidants, has anti-inflammatory properties
  • Mushroom: High levels of protein, potassium niacin and B vitamins, contains calcium, magnesium and phosphorus

How To Make “Zamen” Noodles

Simply get started by making zucchini noodles using a spiralizer or using one of these alternative methods:

Once you have your zucchini noodles you are ready to move on to making your Zamen Zoodle Soup!


  • 2 cups of organic vegetable broth
  • 2 cups of organic vegetables
    • Kale, spinach, broccoli, mushrooms, carrots etc.
    • Add your favorite veggies!
  • 1 organic egg 

Optional add-ins:

  • Tofu cubes
  • Non-vegetarian option: strips of boneless chicken 


1. Bring the broth to a boil, add zucchini noodles and cook for 2-3 minutes until tender.

      • Scoop noodles out and place into a soup bowl. 

2. Add the mixed veggies into the broth and cook on medium low heat for 2-3 minutes until veggies are tender.

3. Pour the mixed veggies over the zucchini noodles and serve:

    • Top it off with your favorite flavors and ingredients, such as:
      • Chili
      • Scallions
      • Low sodium soy sauce
      • Sesame oil
      • Lime
      • Sprouts
