You Gotta Try Sweet Potato “Toast”

From fries and chips… to pancakes and brownies… I thought I had “seen it all” in regards to the many uses of sweet potatoes.

Afterall, they ARE freaking delicious.

However, a  new food trend involving these golden spuds has me thinking, “WHY didn’t I think of THAT?”

If you’ve spent any time on Pinterest lately then you have probably come across countless recipes for…

SWEET POTATO TOAST!

Say whaaaaaat? Yes, people are loading up toasted slices of sweet potatoes with all sorts of yumminess (and healthiness!).

GENIUS, right? The topping options are endless, but to get you started, try out one of these tasty creations:

  • Almond butter, sliced banana, raw honey drizzle and a sprinkle of cinnamon
  • Sliced avocado with sea salt and fresh cracked pepper
  • Dairy-free Pesto, fresh sliced tomato
  • Hummus and chopped vegetables
