Why We Should All Be Eating More Leafy Greens

Not so fast, there! Leafy greens aren’t just for bunnies. They are actually your best friend when it comes to keeping you healthy.
I’m not talking about the skimpy iceberg lettuce offered at your local burger joint or college cafeteria. There are so many different kinds of awesome greens – and you can even cook them to enjoy them better.
Leafy greens are by far one of the most nutritious foods. They are inexpensive, tasty and simple to work with.
Leafy Greens Are:
- Nutritious: They are full of vitamins, minerals, fiber, chlorophyll and more.
- Versatile: You can add leafy greens to so many recipes, like juices, smoothies, salads, sauteed vegetables and more.
- Waist-Line Friendly: They are low in calories, high in fiber and high in nutrients. As a result, they help you to lose unwanted weight and maintain your ideal weight.
Let’s Look At Them One By One:
- Kale is an excellent source of vitamin A, C, and K, as well as calcium and folate.
- Collard Greens are also full of vitamin A, C and K, but also folate, manganese and calcium. Cancer preventative glucosinolates make them powerful. Nutritionally, they are similar to kale, just more chewy.
- Swiss Chard is another green with amazing vitamin A, C and K content, but is also full of magnesium, manganese, potassium and iron. It has over 13 polyphenol antioxidants, making it a true supergreen.
- Turnip Greens – you’ve guessed it – are also a great source of vitamin A, C and K, as well as folate, manganese, calcium, copper, vitamin E and vitamin B6. It tastes a bit bitter due to the high calcium content.
- Spinach was made famous by Popeye. It is an excellent source of vitamin A, C, K, B2, B6 and E, manganese, folate and iron. It is protective against prostate cancer and helps to protect the lining of the digestive tract.
- Beet Greens are full of vitamin A, C, E, K and B6, folate, pantothenic acid, zinc, phosphorus and lutein. Next time, don’t just eat the beet roots – save the greens, too.
How Do You Cook Leafy Greens?
1. Wash your veggies.
2. You may want to remove the leaves from the stalks, though it is a personal preference.
3. You can use the stalk for stock if you don’t want to add them to your dish.
4. Cut the leaves into small pieces.
5. Heat oil in pan.
6. Add greens.
7. Saute them ‘till tender.
You may find greens to be a bit bitter. But by adding something sweet like golden raisins, something crunchy and unique like pine nuts or sesame seeds, something fatty like avocados or nut loafs, you can transform the entire experience into creative art and an orgasm in your mouth.
