Who Needs Mashed Potatoes? Try THIS Instead!

Don’t get me wrong, I love mashed potatoes.
But let’s face it, mashed potatoes are not the healthiest of foods.
What?! But potatoes are the Number 1 crop in the U.S., they are a root VEGETABLE! Potato’s reputation does make it easier to believe it’s good for you.
It’s true that potatoes:
- Are full of phytonutrients.
- May lower lower blood pressure and cholesterol due to their potassium content.
- Aid brain functioning and keep your nervous system healthy due to their vitamin B6 content.
- Help your immunity, because they are loaded with vitamin C.
- May reduce inflammation and arthritis.
- Are good for your heart due to vitamins B6 and C, as well as cholesterol-clearing fiber.
- Are good for your skin due to vitamin C, B6, potassium, magnesium, zinc and phosphorus.
- Help athletic performance due to sodium and carbohydrates.
BUT – once you make your traditional Thanksgiving mashed potatoes with milk, butter and cream, it is anything but healthy. Peeling and adding all the fatty ingredients:
- Cuts down the fiber content, hence becoming more difficult to digest.
- Increases the calories.
- Creates a high-fat dish from a high-carb vegetable.
- Increases the saturated fat content.
- Increases the cholesterol content.
- Increases your blood pressure.
- Increases your risk of heart disease.
It’s better to stick with baked potatoes (using no oil or butter, just a little coconut oil) or boiled potatoes. If you must stick with mashed potatoes, use nut milk instead of cow’s milk and coconut oil instead of butter.

Just like with mashed potatoes, you can make variations. For example, you can add garlic for garlic mashed cauliflower, or you may bake for baked mashed cauliflower.
- 1 head of fresh cauliflower, preferably organic
- 1 tbsp of coconut oil
- Salt/pepper to taste
- Optional: vegan milk if and as desired for a smooth consistency
- In a saucepan, bring 1.5 cups of water to a boil.
- Remove the stem and leaves of the cauliflower.
- Break the cauliflower into smaller pieces.
- Add cauliflower to the boiling water.
- Cook it for 2-3 minutes and remove from heat.
- Let it stand for 5-7 minutes.
- Drain cauliflower.
- Add coconut oil, pepper and salt.
- Mash it using a food processor, blender or food mill.
- Add choice of milk, if desired.
