5 Reasons Coconuts Are Called ‘the Cure for All Illness’

Lime and coconut anyone? Coconuts have been around for a long, long time. Fossil records in New Zealand show that coconut trees have been growing for thousands, if not millions of years. Spanish and Portuguese explorers first mentioned finding what looked like a coco (monkey face) in tall trees in tropical islands in 1555.
In Sanskrit, the word coconut tree or kalpa vriksha, translates roughly to “the tree that gives all that is necessary for living”. Certain islands consider coconuts to be “the cure for all illness” and use all parts of the coconut on a regular basis.
Coconuts can help prevent obesity by speeding the metabolism and suppressing appetite. They are a good source of energy with fewer calories than other fats.
Coconuts also contain medium chain fatty acids (MCFA), which represent 1% of all fatty acids consumed and have no negative effects on cholesterol. In populations such as Sri Lanka and Polynesia, where coconuts are regularly consumed, there are very low to no rates of heart disease and serum cholesterol.
Blood Sugar Regulation
Coconuts fall under the Low Glycemic Index. GI measures how fast carbohydrates raise blood sugar levels. You want to keep your blood levels steady, as spikes or sudden falls can raise your risk of developing diabetes or other blood related problems.
Coconut also helps reduce unhealthy sugar cravings.
Antibacterial, Antiviral, Antifungal, Antiparasitic Properties
Monolaurin, an ingredient in coconut oil, has long been recognized for its bug-fighting properties. Studies have shown that coconut milk can protect against several different kinds of bacteria, fungi, and possibly even viruses. While coconut protects against the bad bacteria, it also helps to preserve the good.
Coconut oil packs a great nutritional punch and is one of the best oils you could possibly cook with. You can heat coconut oil to very high temperatures without it losing nutritional integrity or becoming rancid! Even other great oils like olive oil go rancid once heated to certain temps and are better used for salad dressings and other things that don’t need to be cooked. Coconut oil on the other hand is your best friend on the stove, in the oven and in your body.

Can be used in curry or to thicken soups and sauces. You can also use coconut milk as a substitute for many dairy products.

#7 Pomegranate Coconut Mousse
Pomegranate Coconut Mousse
- 2 cups unsweetened Pomegranate Juice (I used POM wonderful)
- 3 tsp agar agar powder (as a substitute for gelatin)
- ¼ cup raw honey
- 2 cups coconut milk (full fat, canned organic, carrageenan free)
- ½ tsp alcohol free vanilla extract
- ¾ c. pomegranate arils
- 4 Tbsp unsweetened coconut flakes
- In a medium bowl pour in ¼ c of the pomegranate juice and sprinkle the agar agar over the top. Let sit and bloom for a few minutes.
- While the agar agar is blooming, bring the remaining pomegranate juice and honey to a boil. Add the boiling juice mixture to the agar agar mixture in the bowl and mix well until the agar agar is dissolved.
- Pour the mixture back into the saucepan to bring to a simmer. Remove from heat and let cool to room temperature.
- Add in the coconut milk and vanilla extract and place in the fridge until it starts to thicken, about 30-45 minutes. You don’t want it too thick that it won’t pour. Once it’s starting to set up and thicken either mix well by hand or blend until it’s a fluffy and thicker.
- Pour into individual serving glasses or bowls and let set up until firm, about 4 hours. Before serving top with the coconut flakes and pomegranate arils. Serve chilled.
