Watermelon Coconut Ice Cream, Vegan, GF, No Machine Needed! (Viral)

Ice cream is one of my most favorite things in the whole world!
I don’t think there is a better comfort food out there then a bowl of cold, creamy ice cream or a blended-to-perfection milkshake.
But is it worth all the sugar, calories and mystery ingredients (have you ever read the back of commercial ice cream labels?) that will go into my body?
Actually, a lot of the ingredients found in ice cream on the grocery store shelves make my mood WORSE in the long run. I may feel great while spooning the cold, creamy treat into my mouth, but the next day, my moods are all over the place and my skin becomes icky!
Plus it makes me feel so heavy.
Don’t lose hope yet – I’ve got some great news!
You can get all the comfort, all the happiness and all the cool perfection in a bowl of ice cream WITHOUT a SINGLE bad ingredient!
I’ve found a lot of fantastic ice cream recipes out there and this one by Nutrition Stripped was unique enough to catch my eye. It is gluten-free, vegan and requires nothing more complicated than a normal blender.
*You can switch out the watermelon for other things like coffee, your favorite berry, bananas, etc.
Watermelon Coconut Ice Cream
- 1 can full-fat coconut milk (organic is best!)
- 5 dates, pitted
- ⅛ tsp vanilla extract
- 1 ½ cups cubed watermelon*
- Blend all ingredients together and then pour into a cake pan.
- Freeze for 3 hours or until relatively hard.
- Break into chunks and pour back into the blender and blend until creamy like ice cream.
Watermelon is said to be packed with some of the most powerful antioxidants found in nature (especially lycopene)! Who knew America’s favorite summer melon was also a nutritional superfood?
Watermelon is also rich in VITAMINS such as C, A and B vitamins! These are important for keeping the immune system working at its best, strong organs, good eye health and good mental health. Not to mention for ENERGY.
Watermelon is also fat-free and full of…well… WATER! It is also rich in electrolytes and is thus excellent for keeping hydrated.
When you put in a little extra time to learn new shopping and cooking habits, you’ll find that you can indulge in a lot of delicious foods without ever feeling guilty or gross! Although you’ve been raised to eat a certain way, you CAN learn NEW WAYS that can make you feel better, stronger, faster and more healthy than ever before.
It’s worth it. YOU are worth it.
