Try These Two Delicious Vegan Keto Recipes

Are you keto-curious, but are a vegan, or vegetarian or simply love eating plant-based? Keep reading for some delicious keto, low-carb, high fat and plant-based recipes.

While keto recipes often tend to be high in animal products, it is definitely possible to follow a plant-based or fully vegan ketogenic diet. This is what you need to do:

  • Focus on plant-based fat sources, including coconut oil, avocados, olives, nuts and seeds.
  • Eat low-carb vegetables, including greens, cucumber, pepper, broccoli and celery.
  • You can even eat fruits, just make sure to keep your overall carbs low. Lower GI fruits such as berries or green apples are good choices.
  • Tofu, beans, lentils, spinach, nuts and seeds are excellent plant-based protein choices.

Keto Veggie Wraps
  • 2 collard leaves
  • ¼ cup sliced carrots
  • 2 tbsp sauerkraut
  • 2 tbsp tahini
  1. Add your carrots and sauerkraut to the collard leaves.
  2. Wrap it or fold it.
  3. Use the tahini as a dip or dressing.

Keto Avocado Pesto Kelp Noodles
  • Pesto
  • 1 avocado
  • ½ cup of extra virgin olive oil
  • 1 cup fresh baby spinach leaves
  • ¼ cup fresh basil
  • 1 tsp salt
  • 1-2 cloves garlic
  • Noodles
  • 1 package of kelp noodles
  1. Rinse the kelp noodles.
  2. Soak the noodles in water for 30 minutes.
  3. Combine all your pesto ingredients in a food processor or blender.
  4. Drain your noodles after soaking.
  5. Add ¼ cup of pesto per one bag of noodles.
  6. Mix well.
  7. If you want, mix in some veggies, such as broccoli, pepper or sliced carrots. You may add some sliced olives too.

You have to admit, these recipes sound incredibly mouth-watering whether or not you follow the keto diet.
