The Ultimate Vegan Taco Night Fiesta

Have you ever aspired to write a book?
I know I have. And I still do.
However, upon one of my rabbit hole expeditions into la-la internet land (you know… when you scroll and scroll and scroll and scroll…), I unearthed the most concise sentence EVER written to sum up the main struggle in my life (because every book needs some strife).
Here it goes…
“I’m just a girl,
standing in front of a salad,
asking it to be 3 tacos,
2 margaritas and an
order of queso.”
Mind = blown. THAT is exactly how I feel.
Life is hard… because TACOS are so delicious.
However, every story also needs a heroine that comes to save the day – so here I am, your knight in shining kitchen armour, ready to share HEALTHY recipes that can easily go head to head with the health benefits of a salad.
Because you and I are both the authors of our own life stories… let’s give THIS story a happy (and delicious) ending!
First… 3 Tacos.
- Whip up Vegan Taco “Meat” That Will Dominate Taco Night
- Chop up your favorite veggies (lettuce, red and green bell peppers, onion, tomato, black olives, etc.)
- If you are a taco shell kinda person, then switch it up to one of these veggie-inspired options:
- OR make yourself a rockin’ taco salad by layering a bowl with lettuce, taco “meat,” veggies, guacamole and your other favorite toppings!
Second… 2 Margaritas.
It’s not a fiesta unless there are some good margs in the house! However, standard margaritas can be full of refined sugar.
Mix up your own health version by using:
- 3 tablespoons freshly squeezed lime juice
- 1 ½ tablespoons freshly squeezed orange juice
- 1 teaspoon light agave nectar
- Sea salt to rim the glass
- Lime wedge for garnish
- ADULTS ONLY: 3 tablespoons silver tequila
Add the ingredients to a shaker, give it a good shake shake shake and then pour it into a salt rimmed glass.
And Finally… An Order Of Queso.
Damnit cheese, why do you ALWAYS have to be so delicious (aside from blue cheese that tastes like dirty socks)?
