Fall is the perfect time for whipping up some delicious homemade granola! Not only can you mix it with fruit and kefir for a delicious, nutrient-dense breakfast, but you can also bag it up and hand it out to your friends for the holidays!

This recipe is specifically designed to be “raw,” meaning that it is not cooked over a certain temperature in order to maintain optimal nutritional potency.

You can mix and match some of the seeds in this recipe, depending on what you have in your household. Buying in bulk usually gets you the best prices on the more expensive nuts/seeds/superfoods and you can use them for months in a variety of ways (plenty of room to experiment and be creative!).

“Fall” Into Raw Vegan Granola Recipe

Serves: Makes about 6 Cups
Ingredients
  • 2 cups soaked and dehydrated buckwheat
  • 4 tbsp ground flaxseed
  • ⅔ cup sunflower seeds
  • ⅔ cup pumpkin seeds
  • ⅔ cup raisins
  • ⅔ cup dried apple slices
  • ⅓ cup raw honey
  • ⅓ cup pure maple syrup
  • 2 tbsp coconut oil
  • 4 tbsp water
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp sea salt
Instructions
  1. Combine all dry ingredients together in a large bowl.
  2. Whisk together remaining ingredients and pour over dry mixture.
  3. Use your hands or a large spoon to mix everything together thoroughly.
  4. Dehydrate at 115 degrees for 10-12 hours, then store in refrigerator. If you DO NOT have a dehydrator, you can also put it in a fan-assisted oven for 4 hours at 80 degrees.

 

The Benefits Of This Delicious Combination

  • Buckwheat

Buckwheat is a great alternative to other grains, because it is gluten-free, non-allergenic and a good source of alternative protein. Buckwheat is also relatively chemical-free due to the fact that it grows quickly and does not need a lot of chemical interventions to keep it clean and free of bugs.

  • Flaxseeds

Flaxseeds are a powerful medicinal food and contain anti-cancer and anti-diabetic properties. Flaxseeds are particularly beneficial to women as they have been shown to help with post-menopausal symptoms as well as protect against estrogen-dependant forms of cancer. They also contain good amounts of omega-3 fatty acids (vital for nervous system health) and magnesium (important for hundreds of bodily functions).

  • Sunflower Seeds

Sunflower seeds are packed with vitamin E, which is vital for good cardiovascular health as well as maintaining healthy skin. Vitamin E also acts as an antioxidant and anti-inflammatory inside the body. Sunflower seeds also contain a good dose of magnesium (something 80% of the population may be deficient in!).  

  • Pumpkin Seeds

One ounce of pumpkin seeds contains 9 grams of protein! Not bad for a little seed. Pumpkin seeds are great for men, because they are rich in zinc – a mineral that is vital for optimal prostate health, libido and preventing hyperplasia. They are also good for women who are going through post-menopause symptoms due to their phytoestrogen content.

  • Apples

Apples are one of my very favorite fruits! Not only do they provide a nice energy boost, but science has shown that eating apples has a beneficial effect on gut bacteria in the large intestine (healthy gut = healthy you!). Apples also contain strong antioxidants and nutrients vital to good brain health.

  • Raisins

Raisins contain a good amount of fiber and expand in the body to help relieve constipation and digestive issues. They also provide a healthy means of weight gain for those struggling with being too thin, because of their natural fructose/glucose content. Although they have a high sugar content, because it is in natural form, raisins have actually been shown to HELP those with diabetes by preventing blood sugar spikes after meals.

  • Honey

Raw honey is a true superfood and one of the only real foods that DOES NOT easily go bad. Honey is packed with beneficial enzymes and contains antifungal, antiallergenic and antibacterial properties. Many athletes use honey to boost performance and endurance as well as to speed recovery after a competition.

  • Maple Syrup

Pure maple syrup is the perfect natural sweetener. It is rich in antioxidants called polyphenols, which act as powerful anti-inflammatories in the body. Maple syrup also contains zinc, which is important for heart and cardiovascular health and also in preserving men’s reproductive health.

  • Coconut Oil

Coconut oil provides healthy fats and boosts the immune system. According to Dr. Oz, coconut oil can help keep you from getting sick from colds and the flu as well as fight yeast infections. Coconut oil also has benefits for our thyroid and is believed to boost thyroid function and hormone regulation.
