The Best Pumpkin Smoothie Recipe You’ll Ever Taste

Okay, you know I love a great smoothie (especially a green one), but I came across a smoothie that literally blew my mind! I could not begin to tell you how delectable this smoothie is, it was so great, I just had to share!

Before I share this amazing recipe, here is why you must try it out! It features your usual suspects, spinach, coconut milk, apple, banana and a few unexpected surprises like pumpkin, collagen, etc.

As you may know, spinach, apples and bananas are awesome for you. I would like  you to look at the benefits of a few of the unexpected surprises. Three in particular deserve a mention:

Pumpkin

While most people think that it is vegetable, pumpkin is actually a fruit. What’s not to love about this fruit? It is full of potassium, beta-carotene, fiber, vitamins A, B6, C and E, riboflavin, potassium, copper and manganese and at least 5 percent of thiamin, folate, pantothenic acid, niacin, iron, magnesium and phosphorus. It also contains antioxidants. It is an extremely nutrient-dense food, high in vitamins and minerals, but low in calories. Awesome, right?

Cinnamon

A sweet and hot spice that is in most people’s spice rack, but did you know that cinnamon is high in antioxidants and anti-inflammatory properties, helps fight diabetes, protects heart health, helps defend against cognitive decline, protects brain function, fights infections and viruses, helps fight allergies and can even help prevent and aid candida?

Collagen Hydrolysate

Ingredients
  • 1 cup unsweetened vanilla coconut milk
  • 1-2 tbsp pure maple syrup or raw honey
  • ½ cup organic pumpkin puree
  • 1 tsp pumpkin pie spice
  • ½ tsp cinnamon
  • 1 banana (I subbed ½ avocado, because I don’t like banana)
  • ¼ green apple
  • 2 tbsp collagen hydrolysate
  • Heaping handful of spinach
Instructions
  1. Toss all ingredients into a high-speed blender.
  2. Blend until smooth and creamy.
  3. Enjoy that pumpkin pie flavor without the guilt and all the YUM!
