My husband and I switched over to a mostly grain-free diet this year due to some health issues he was experiencing.

We’ve had a lot of success in the kitchen as far as making great alternatives to pancakes, muffins, rice and the like. But do you want know what has been the HARDEST grain-filled food item to replace?

PIZZA.

There’s just nothing like a slice of good, homemade pizza. Before our grain-free days, my husband made an incredible chicken alfredo pizza masterpiece and to say that I miss eating it would be an understatement.

However… as far as alternative pizza recipes go, this one takes the cake (the grain-free cake, of course).

We’ve already become well aware of the benefits of cauliflower and of its versatility in the kitchen. We’ve used it to make rice, popcorn, mashed potatoes, indian flatbread… but hadn’t dared make it into pizza before finding the recipe below.

Crispy Cauliflower Pizza Crust Recipe

Ingredients
  • 2 heads cauliflower
  • 3 eggs
  • 2 cups shredded raw parmesan
  • 1 tbsp italian seasoning
  • 1 tbsp sea salt
Instructions
  1. Cut up the cauliflower into smaller pieces and either pulse in a food processor or shred them with a cheese shredder until they look like rice.
  2. Spread evenly on a baking sheet and bake at 425 for about 10 minutes.
  3. Allow to cool.
  4. Lay a flour sack or something similar inside of a bowl, add the cauliflower and squeeze out all the liquid.
  5. Add remaining ingredients and mix thoroughly with your hands.
  6. Spread the mixture out onto a baking sheet lined with Silpat.
  7. Bake at 425 until top begins to brown, then flip it and bake an additional ten minutes.
  8. Add your sauce and favorite toppings. Sprinkle generously with cheese.
  9. Bake until cheese is melted.
  10. Enjoy!
