Sweet Cauliflower To The Rescue!

Have you been sent the recipe for cauliflower pizza crust or cauliflower bagels yet? Has someone you know gotten really excited about the possibility of eating a substitute for bread using this incredibly nutritious vegetable? These recipes seem to be all the rage and for good reason!
If you haven’t tried a new spin on cauliflower yet, maybe it’s time that you did! After all, this veggie is delicious, nutritious and versatile, making it a great choice for a variety of dishes.
If the idea of replacing your common foods – bread or the like – with cauliflower doesn’t leave you excited, that’s okay! As mentioned, there are so many options when it comes to how to use this veggie so experiment and find something that works for you.
I made cauliflower bread once, years ago, before it became popular and when I was still living my life in a “dieters” mindset; still trying every trick in the book not to eat a single carbohydrate. It wasn’t my favorite, but that’s my own opinion. I do, however, make cauliflower weekly and you should too!
It’s one of the easiest veggies to prepare and can be steamed, mashed or roasted in no time at all. It’s a great choice to support a healthy immune system and strong heart, while keeping your belly and cells happy and energized.
Here’s a little cauliflower recipe that may excite your tastes buds and takes only a few minutes of your time to prep:
What Makes This Dish So Powerfully Nutrient-Dense?
Sweet Cauliflower Mash
- 1 whole cauliflower
- ½ cup of unsweetened almond milk
- ¼ cup of coconut sugar or pure maple syrup
- ¼ cup of coconut oil
- 1 lemon
- Salt and pepper
- Chop your cauliflower into florets and steam them until they are very tender. 20 -25 minutes.
- Add the rest of the ingredients into a blender and mix until you have the consistency of the mash that you like.
- Squeeze the lemon, zest the skin and add salt and pepper to taste. Add extra sweetener if needed.
Surprise ingredient: Add a drizzle of unsweetened dark chocolate to your cauliflower. It adds a sweet and subtle flavor!
*Option to omit sweeteners for a more savory dish.
- Antioxidants: It is rich in a broad spectrum of antioxidants and anti inflammatory nutrients, which means they protect your body from overactive cells that can cause harm in the way of suppressed immune support and certain types of cancers.
- Choline: Choline is the super nutritious part of the egg yolk, but guess what? Cauliflower contains choline too! Choline is the B – complex vitamins that have to do with anything keeping your brain healthy (think memory and central nervous system).
- Cardiovascular Support: Cauliflower is known to have tremendous cardiovascular supportive properties as well. The sulforaphane cauliflower contains triggers an anti-inflammatory response in our cardiovascular system and can help oxygenate our circulatory system.
- Dark Chocolate: Dark chocolate has more antioxidants per serving than half a cup of berries. Fiber, Magnesium, Iron, Copper. This is plant medicine at its purest form. Dark chocolate will replace those sugar crash blues with its natural happy serotonin boosting high. Aim for a cacao content of 70% or higher.
Keep it simple and keep adding real food to your diet regularly! Your body will thank you, from the inside out!
