Artichoke dips are one of the most popular party dips you likely love. The problem is that despite of all the healthy artichokes in them, they are not good for your health. Traditional recipes are filled with sour cream, mayonnaise and cheese, otherwise known as mucus-inducing, inflammatory dairy and unhealthy sources of fat.
The good news is that there are healthy alternatives to this popular dip that are just as – if not more – delicious as the traditional one.
This artichoke dip is healthy, vegan and super easy to make. I guarantee that you will love it.
Benefits Of This Artichoke Dip
Artichokes are abundant in antioxidants, keeping cancer and other illnesses away. They are a great source of dietary fiber, making them good for your digestion. They are also excellent for liver support, balancing your cholesterol levels, brain health, balanced blood pressure and bone health as well.
The zucchini will provide light creaminess to this recipe along with many health benefits. Zucchini is high in fiber and low in calories, which makes it great for weight loss and maintenance. Zucchini is also excellent for cardiovascular health and can help keep cancer away due to being abundant in vitamins and minerals, including vitamin A, C, potassium, magnesium and folate.
Lastly, the cashew will add more texture and even more creaminess to this dip. Cashews are also a healthy source of plant-based protein and fat. They are filled with goodies, including vitamin E, K and B6, magnesium, copper, iron, phosphorus and selenium. Super Easy Artichoke Dip

Ingredients:
- 3 cups of artichokes (canned or from a jar)
- 2 cups of peeled raw zucchini
- 1 cup of raw cashews
- 1½ -2 tbsp of lemon juice
- 1 medium garlic clove
- Salt and pepper
Instructions: Add all ingredients to a blender. Blend well. Serve it with veggie sticks or raw crackers.
