It may be hard for some to eat healthy during the holidays, considering all the different types of food that tends to be at family gatherings. If you want to add a healthy dish to the holiday menu, I’ve got a delicious recipe for you.  

One medium potato contains 0 grams of cholesterol, 0.2 grams of fat, 4.3 grams of protein, 4.7 grams of dietary fiber, 37 grams of carbohydrate and 164 calories. The same serving can meet 2% of your daily calcium needs, 9% iron, 12% magnesium, 25% of potassium needs, 30% vitamin B-6 and 51% vitamin C. It can also provide zinc, folate, niacin, choline and phosphorus.

Rosemary contains substances that are useful for increasing circulation, improving digestion and stimulating the immune system. It also contains anti-inflammatory compounds that are useful in reducing the severity of asthma attacks. Rosemary has also been found to improve concentration by increasing blood flow to the head and brain.  

This recipe focuses on both of these ingredients to allow you to cook a meal that is not only healthy for you, but also extremely tasty. Give it a try this season and let us know how it goes!

Roasted Rosemary Fingerling Potatoes

Ingredients
  • 1 tbsp chopped fresh rosemary
  • 2 tbsp olive oil
  • ¾ tsp kosher salt
  • ½ tsp black pepper
  • 3 shallots, thinly sliced
  • 2 pounds fingerling potatoes, halved lengthwise (about 6 cups)
  • Cooking spray
  • 2 tsp minced fresh chives
Instructions
  1. Preheat oven to 425°.
  2. In a large bowl, combine the first 6 ingredients and toss to coat.
  3. Spray the cooking spray on a foil-lined jelly-roll pan and arrange the potato mixture.
  4. Bake for 27 minutes, or until the potatoes are tender.
  5. Turn after 15 minutes.
  6. Sprinkle the chives over evenly and serve.
