White Chicken Chili

Ingredients

  • 2 lbs chicken breast
  • Sea salt to taste
  • 1 onion, sliced
  • 4 celery stalks, sliced
  • 8 cloves garlic, minced
  • 1 can organic coconut milk
  • 3 cups organic chicken broth
  • 1 yellow pepper, sliced
  • 3 parsnips, peeled and chopped
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp cumin


Directions

  1. Brown chicken breast in a cast iron skillet (optional).
  2. Place chicken breast in crockpot and season with salt.
  3. Add all other ingredients and stir to combine.
  4. Cook on high for 6 hours.
  5. Using a fork, shred the chicken breast. Stir.
  6. Serve.
