Halloumi-and-veggie-egg-scramble-to-her-core

Ingredients

  • 2 whole eggs (pasture raised)
  • Handful of spinach
  • Handful of mushrooms, sliced
  • ¼ red onion, diced
  • ½ avocado
  • salt & pepper to taste
  • 1 tbsp butter or coconut oil


Directions

  1. Add a tablespoon of butter or coconut to a pan and let melt on low heat
  2. Add diced red onion and mushrooms and cook until soft (about 3-4 minutes)
  3. While onions are cooking, crack 2 whole eggs into a small bowl and whisk until fully mixed
  4. When onions are ready, add egg mixture and stir
  5. As the egg starts to cook, add in the handful of spinach Continue to stir all ingredients until eggs are fully cooked
  6. Top with salt & pepper
  7. Serve with ½ an avocado
  8. Option to add your favorite salsa or hot sauce
