Thai Cashew Salad

  • 1 cup romaine lettuce, chopped
  • 1 small handful bean sprouts
  • 10 mint leaves, finely chopped
  • 2 medium carrots, grated or sliced
  • ¼ cup cashews, chopped
  • ½ red bell pepper, sliced
  • 2 green onions, finely chopped
  • Dressing:
  • 1 tbsp lime juice, freshly squeezed
  • 1-2 tbsp coconut aminos*
  • 1 clove garlic, minced
  • 1 tbsp sesame seed oil
  • ½ tsp red pepper flakes for spice (optional)
  • *If you do not have coconut aminos, use sesame seed oil, a squeeze of lemon and salt to taste.


  1. Add all salad ingredients in a large mixing bowl
  2. Mix dressing ingredients in a separate, small bowl.
  3. Toss salad with dressing and serve.
