Sun-Dried Tomato Cashew Hummus

  • 1.5 cups raw cashews (soaked in water overnight)
  • 2-3 tbsp sun-dried tomatoes
  • juice of 1 lemon
  • 1-2 tbsp nutritional yeast
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic minced
  • 1 tsp onion powder
  • sea salt & pepper to taste


  1. Blend all ingredients together in food processor or high-speed blender, such as a Vitamix. Add a little bit of water if needed to help blend.
  2. Serve with veggie sticks (carrots, celery, bell pepper, cucumber).
