Spinach Mushroom Quiche

  • 8 eggs, pasture-raised & organic
  • 1.5 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1/2 of a medium onion, chopped (red or white)
  • 1 tsp sea salt
  • 1 tsp pepper
  • 1 tbsp butter or coconut oil
  • ½ cup coconut milk for creaminess (optional)


  1. Preheat oven to 350
  2. Grease 9-12” baking dish with coconut oil or butter
  3. Crack eggs into a mixing bowl and whisk until egg yolks and whites are mixed
  4. Add spinach, mushrooms, sea salt and pepper to egg mixture and whisk all ingredients together
  5. Pour mixture into baking pan
  6. Bake for 30 minutes, or until cooked through center
  7. Option to serve with ½ an avocado and top with salsa or hot sauce
