Rosemary Garlic Lentils

Ingredients

  • 1-1.5 cups of lentils, pre-cooked (you can find at Trader Joe’s or local health market)
  • 2 tbsp butter or coconut oil
  • 2 garlic cloves, minced
  • 1 tbsp rosemary leaves, finely chopped
  • Juice of ½ lemon
  • salt & pepper
  • Handful of arugula


Directions

  1. Heat butter or coconut oil in medium pan on low heat.
  2. Sautee rosemary and garlic for 1-2 minutes.
  3. Add pre-cooked lentils and cook on low heat until heated through.
  4. Add lemon juice, salt & pepper to taste and serve hot or cold over a bed of arugula.
  5. *Option to make lentils from scratch but it is much more time-consuming.
