Ingredients

  • 2 tbsp butter or coconut oil
  • 2 cloves of garlic, minced
  • 1 cup quinoa (any variety)
  • 2-2.5 cups vegetable or chicken stock
  • ½ cup cherry tomato, diced
  • 1 small cucumber, diced
  • 3 green onions, finely chopped
  • 1 lemon, juiced
  • small handful mint, finely chopped
  • 1 tbsp olive oil
  • salt & pepper
  • Protein Option:
  • Meat Eaters: add a side of grilled fish or meat of choice.


Directions

  1. Coat a saucepan with coconut oil or butter.
  2. Add garlic slices and cook until soft.
  3. Add 1 cup of quinoa and 2 cups of stock.
  4. Bring to a boil, then reduce to a simmer.
  5. Cook until all liquid is evaporated and quinoa is light and fluffy (approximately 15-20 minutes), adding more stock if needed (I usually add at least ½ cup extra).
  6. Transfer cooked quinoa to a large mixing bowl. Option to chill in refrigerator or serve warm.
  7. Add in tomato, onion, mint, lemon juice and olive oil.
  8. Add salt and pepper to taste.
