Plantain Nachos

  • Plantains:
  • 4 green plantains
  • 2 tbsp coconut oil
  • Toppings:
  • 1 cup grape or cherry tomatoes
  • 1 large yellow or white onion
  • 1 bunch cilantro
  • 3 ripe avocados
  • 1 jalapeno
  • 2 limes
  • Protein Option:
  • Paleo: 1lb grass fed ground beef
  • ½ minced white onion
  • 4 cloves of minced garlic
  • tomato Paste
  • chicken broth
  • 2 tbsp coconut oil
  • Vegetarian/Vegan: Add black beans or make walnut taco meat (see separate recipe)
  • Spices:
  • 1 tbsp ground cumin
  • 1 tsp chili powder
  • 1 tsp oregano leaves
  • 1 tsp cayenne pepper
  • 1 tbsp onion powder
  • 1 tsp salt
  • 1 tsp pepper


  1. Preheat oven to 350.
  2. Cover two baking pans with aluminum foil or parchment paper and set aside.
  3. Prepare the plantains: a. Cut off both ends of the plantain. b. Make a shallow slice lengthwise down the skin. Use your hands to peel the skin off. c. Very thinly slice the plantain into ovals. d. Toss sliced plantains with coconut oil in a bowl.
  4. Bake the Plantains: a. Lay the coated plantains flat on the baking sheet and sprinkle with salt. b. Bake for about 35 minutes or until crisp. *Baking time varies based on the pan/sheet you use so make sure to check that they don’t burn.
  5. Taco Meat: a. Heat the coconut oil over low-medium heat. b. Add the garlic and onions and cook on low heat until softened (about 5-7 minutes). c. Place meat in a large bowl. d. Add spices: cumin, chili powder, oregano, cayenne, onion powder, salt pepper to the meat and mix together. e. Add meat in with onions and garlic and mix. f. Add the tomato paste and chicken broth. g. Stir all together to combine. h. Bring to a boil then simmer and cook until the liquid has reduced (about 10-15 minutes). i. Add salt and pepper to taste.
  6. Pico de gallo & Guacamole: see separate recipe for both.
  7. Top the baked plantains with taco meat, pico de gallo, guacamole and option to garnish with extra cilantro and a few slices of jalapeno.
