Pesto Kelp Noodles

  • 1 package kelp noodles
  • 2 cups fresh basil
  • 1/3 cup extra virgin olive oil
  • ½ cup hemp seeds
  • 1 – 2 tablespoons of nutritional yeast (depending on how “cheesy” you like it)
  • 1 clove garlic
  • Salt and pepper to taste
  • ½ cup packed sundried tomatoes
  • 1 cup spinach


  1. In a blender or food processor, blend basil, olive oil, hemp seeds, nutritional yeast, garlic, salt and pepper
  2. Soak sundried tomatoes in a bowl of room temperature water to hydrate them for about ten minutes. Remove from water, pat dry, and slice thin
  3. Rinse kelp noodles and set aside
  4. In a frying pan over medium heat, mix together kelp noodles, pesto sauce and sliced sundried tomatoes
  5. Chop spinach and add into mixture
  6. Plate and enjoy! *Note, these can also be enjoyed cold if preferred
