Lemon Quinoa Mint Salad

  • 1 cup quinoa
  • 2 cups organic chicken broth
  • ½ cup pine nuts
  • ¼ cup organic corn
  • 10 fresh mint leaves, chopped finely
  • Juice from one lemon
  • Sea salt and pepper to taste


  1. Cook the quinoa in the chicken broth until fluffy. Add in remaining ingredients and stir.
