Kimchi Bean Sprout Soup

  1. Bring the water and anchovies to a boil in a soup pot. *Reduce heat and simmer 5 minutes. *Remove anchovies.
  2. Add bean sprouts, kimchi and mushrooms (optional) to the soup pot. *Bring everything to a boil. *Cover and simmer over medium-low heat for 10 minutes.
  3. Add salted shrimp or fish sauce. Taste. *Add salt to your desired taste.
  4. Add chili slices and simmer 2-3 more minutes. *Sprinkle with green onion.
  5. Enjoy!
