Kale and Mango Salad

Ingredients

  • 1 bunch kale
  • Juice from 1 lemon
  • ¼ cup extra virgin olive oil
  • Sea salt and black pepper to taste
  • 1 ripe mango, peeled and chopped
  • ¼ cup sunflower seeds


Directions

  1. De-steam the kale and tear into salad-size pieces.
  2. Put in a bowl and add ½ the lemon and olive oil.
  3. Massage into kale leaves with your fingers (until you feel fibers soften and break).
  4. Add mangoes, sunflower seeds and remaining lemon juice and olive oil.
