Ingredients

  • 1 large handful kale, steamed
  • ½ lemon
  • 1 ½ tbsp olive oil
  • ½ cup quinoa
  • 1 sweet potato
  • ½ avocado
  • 2 tbsp goji berries
  • 2 tbsp pumpkin seeds
  • 2 tbsp hemp seeds
  • ½ cup sprouts or microgreens
  • Dressing
  • 2 tbsp tahini
  • 1 tbsp pure maple syrup
  • ½ tbsp miso paste
  • ½ lemon juice
  • 2 tbsp water


Directions

  1. Cook quinoa.
  2. Preheat oven to 425.
  3. Top sweet potato with olive oil and sea salt. Bake for 20-25 minutes.
  4. Destem kale then put in a bowl. Add lemon juice and olive oil. Massage leaves until fibers break down.
  5. When finished, add sweet potato and quinoa to kale.
  6. Top with remaining salad ingredients.
  7. Mix together dressing ingredients then drizzle on salad.
