  • 2 cups romaine lettuce
  • 1 tomato
  • ½ cucumber
  • 6-8 olives (black or kalamata)
  • ¼ red onion
  • Handful of parsley, chopped
  • 1 tbsp greek pepperoncini (optional)
  • Protein Option:
  • Meat Eaters: grilled chicken
  • Vegan: add ¼ cup chickpeas/garbanzo beans
  • Dressing:
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • ½ clove garlic
  • salt & pepper to taste


  1. Chop romaine and put in mixing bowl.
  2. Slice tomato, cucumber, red onion and olives and put in bowl Chop parsley and add to bowl.
  3. Mix dressing ingredients and add salt & pepper to taste and add to salad.
  4. Toss salad and top with protein of choice.
