Ingredients

  • Quinoa (cook according to instruction – let cool in fridge)
  • Cherry tomatoes (cut in half)
  • Red onion (diced)
  • Artichoke hearts
  • Cucumber (cubed)
  • Kalamata olives (pitted and sliced)
  • Pink Himalayan Sea Salt
  • Fresh Ground Black Pepper
  • Feta cheese (optional)
  • Olive oil
  • Balsamic vinegar


Directions

  1. Cook the quinoa according to the instructions on the package. Place in refrigerator to let cool.
  2. Wash your veggies. Chop them up.
  3. Mix everything together
  4. Add olive oil, balsamic vinegar, salt, and pepper to taste
  5. Sprinkle feta cheese on top (optional)
