Fried Eggs with Sweet Potato Hash

- 4 whole eggs (preferably pasture raised)
- 2 medium-size sweet potatoes, peeled and grated
- 1 white/yellow onion diced
- 3-4 green onions, sliced
- salt & pepper
- 3 tbsp butter or coconut oil
- 1 tbsp coconut flour (optional)
- For the Hash:
a. Peel & grate sweet potato and put in a large mixing bowl.
b. Dice onion and slice green onion and add to bowl.
c. Crack 2 who eggs into mixing bowl.
d. Option to add 1 tbsp of coconut flour for flavor/texture.
e. Mix all ingredients, top with salt and pepper.
f. Add 3 tbsp butter or coconut oil to a large frying pan and melt on low-med heat.
g. Add hash mix and cook on medium heat, stirring as needed, until lightly browned (approximately 6-8 minutes).
- For the eggs:
a. Add tbsp butter or coconut oil into a frying pan and melt on low heat.
b. Once melted, crack 2 whole eggs into pan and cover with lid.
c. Keep on low heat until top of the eggs are lightly cooked/covered (approximately 3-4 minutes) If you like over-medium eggs, cook a bit longer.
d. Remove eggs with a spatula and serve over hash.
*please note, you can always scramble the eggs if you prefer.
