Ingredients

  • 2 tbsp butter or coconut oil
  • 2 cloves of garlic, minced
  • 1 cup quinoa (any variety)
  • 2-2.5 cups vegetable stock


Directions

  1. Coat a saucepan with coconut oil or butter.
  2. Add garlic slices and cook until soft.
  3. Add 1 cup of quinoa and 2 cups of stock.
  4. Bring to a boil, then reduce to a simmer.
  5. Cook until all liquid is evaporated and quinoa is light and fluffy (approximately 15-20 minutes), adding more stock if needed (I usually add at least ½ cup extra). *Use leftover quinoa in salads or other meals.
