Cauliflower_Kale_Salad


Ingredients

  • 4 large kale leaves (massaged)
  • ½ cup cherry tomatoes, sliced in halves
  • ¼ head of cauliflower, grated or cut into small pieces
  • 2 green onions, chopped
  • Small handful of parsley, finely chopped
  • Protein Options:
  • Meat Eaters/Vegetarian: 1-2 hard boiled eggs
  • Vegan: 2 tbsp hemp seeds or ¼ cup garbanzo beans
  • Dressing:
  • Juice of 1 lemon
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • salt & pepper to taste


Directions

  1. Rinse kale and separate the leaves from the stem. Massage kale by rubbing the leaves together with a bit of lemon juice or olive oil and place in a large mixing bowl.
  2. Add in sliced tomatoes, green onion, parsley and cauliflower (option to grate or just chop cauliflower into small pieces) Mix dressing ingredients and add to salad.
  3. Add protein option and toss together.
