Carrot Miso Soup – Digestion

  • 2 tbsp olive oil
  • 1 onion
  • 3 cloves garlic
  • 4 lbs carrot, chopped
  • 2 parsnips chopped
  • 2 - 4 celery stick, sliced
  • 1 green bell pepper sliced
  • 2 tbsp dulse
  • 1 big piece ginger
  • 10 cups vegetable broth
  • 4 tbsp miso paste


  1. Heat oil. Add onion and garlic and cook until lightly browned. Add carrots, peppers, celery and parsnip, and ginger. Cook for about 10 mins. Add dulse. Add vegetable broth. Simmer for 40 mins. Add everything to a blender and blend it till smooth. Mix 4 tbsp miso paste just before serving.
