Apple, Celery, Walnut Salad

Ingredients

  • 1 green apple, diced
  • 2 celery sticks, thinly sliced
  • 1 cucumber, diced
  • 1 beet, diced
  • 1/4 cup of raw walnuts (activated, soaked in water before)
  • 1 tbsp hemp seeds
  • 1 cup of cooked red quinoa


Directions

  1. Mix all ingredients together.
  2. You can serve it hot or cold.
  3. Good w/out any dressing. Or mix 4 tbsp of olive oil, 1 tbsp of lemon juice, salt and pepper as desired to mix with.
