Almond Spinach Salad

  • 1 large handful spinach
  • ¼ cup almonds, chopped (ideally in food processor)
  • 2 green onions, finely chopped
  • 1 celery stalk, chopped
  • 1 glove garlic, minced
  • Dressing:
  • 1 tbsp fresh lemon juice
  • 1 tsp dijon or stone ground mustard
  • ¼ avocado, mashed
  • 1 tsp nutritional yeast (optional for flavor)
  • sea salt & pepper to taste.
  • 1 tbsp olive oil
  • Protein Options:
  • Meat Eaters/Vegetarian: 1-2 hardboiled eggs, sliced
  • Vegan: 2 tbsp hemp seeds


  1. Rinse spinach and set aside in large mixing bowl.
  2. Process almonds in food processor or by hand and place in separate bowl.
  3. Add green onions, celery stalk, garlic, lemon juice, mustard, avocado and nutritional yeast to almonds. Mix well together and top with salt and pepper to taste.
  4. Add almond mixture on top of spinach bed.
  5. Top with fresh squeezed lemon juice and olive oil.
