Pumpkin Spice Protein Balls

Summer is the perfect time to be active in nature. Whether you love going for long runs, enjoying some beautiful hikes, swimming in open water, playing beach volleyball with your friends, running around with your kids, playing fetch with your puppies, doing yoga in the grass or whatever else, you will need something to refuel your body.
There Pumpkin Spice Protein Balls are the ultimate energy-filled snacks you can give to your body. They are high in protein, free from processed sugar, gluten-free, vegan and absolutely delicious. They are easy to make and ready within a few minutes.
The sweetness of these balls comes from dates. Dates are not only nature’s candy, but they are also excellent for your digestion, bones, blood, heart and immune system. They are high in iron and fill your body with energy.
The chia seeds will fuel your body with anti-inflammatory omega-3 fatty acids and extra protein.
The walnuts and hazelnuts are also there for you as healthy fat and protein sources.
To make sure you meet all your protein requirements, we have added 2 scoops of Organifi Protein Powder to the recipe. You can use either the chocolate or the vanilla flavor. These protein balls are perfect for kids and adults alike. They keep you away from processed snacks and sugar-filled energy bars and keep your body satisfied and nourished for a long period of time.
Pumpkin Spice Protein Balls
- 1 cup dried organic dates
- 2 scoops Organifi Protein Powder
- ¼ cup pumpkin puree
- 1 tbsp pure maple syrup (plus more to taste)
- 1 tbsp chia seeds
- 2 ¼ tsp pumpkin pie spice
- 1 tsp pure vanilla extract
- 1 cup gluten free oats
- ½ cup walnuts
- ¼ cup hazelnuts
- ½ cup unsweetened coconut flakes (to coat outside of balls)
- In a food processor, pulse the dates into small pieces and form a sticky ball.
- Add the protein powder, pumpkin puree, maple syrup, chia seeds, pumpkin pie spice and vanilla extract to food processor and pulse to combine into a smooth mixture. Taste and add any additional maple syrup if you prefer a sweeter taste.
- Add the oats and nuts next and pulse to combine, leaving the oats and nuts in small pieces.
- Transfer the mixture to a bowl, cover and refrigerate for at least a half hour. Scoop mixture and roll into balls. Then roll balls in coconut flakes. Store in refrigerator in an airtight container.
Once you try these balls, you will realize that you can’t get enough of them and may want to have them every day. Don’t worry, it’s all healthy and good, your body will thank you for having these regularly.
