How To Make Sweet Potato Noodle Coconut Curry Soup
 
Ingredients
  • 1 13.5-ounce can coconut milk
  • 1 large sweet potato, spiralized into noodles
  • 1 small white onion, diced
  • 1 red bell pepper, cut into thin slices
  • 1 ½ cup frozen green peas
  • 3 cloves minced garlic
  • 1 tbsp minced fresh ginger
  • 2 tbsp yellow curry powder
  • 3 cups vegetable broth
  • ½ lime, juiced
  • Fresh cilantroto garnish
Instructions
  1. Preheat oven to 425 F.
  2. On a baking sheet, spread out the spiralized sweet potato noodles and then bake for 10 minutes.
  3. In a soup pot, saute the diced onion in 3 tablespoons of water for 5 minutes or until tender.
  4. Add garlic, ginger, red pepper - saute 2 minutes.
  5. Add curry powder, vegetable broth and coconut milk - simmer for 15 minutes over medium heat.
  6. Add green peas and lime juice - stir to combine.
  7. To serve: pour into bowls and top with the baked sweet potato noodles.
  8. Garnish with chopped cilantro and lime if desired.
