Peppermint Black Bean Brownies Recipe, Vegan Style

Ah. The holidays.

On top of Thanksgiving, Christmas is another time of the year that includes food, family and friends. Christmas also means making goodies to bring to family gatherings and holiday parties.

If you are in the need of a healthy, but yummy dessert recipe, you have got to try these peppermint black bean brownies (did I mention they’re vegan)!

Ingredients:

  • 1 15-ounce can (about 1 ¾ cups) unsalted black beans, thoroughly rinsed and drained
  • 2 flax eggs
  • 3 tbsp coconut oil, melted
  • ¾ cup cocoa powder
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp pure vanilla extract
  • Heaping ½ cup raw sugar (OR substitute stevia, dates, coconut sugar, or maple syrup)
  • Scant ¼ tsp peppermint extract
  • ¼ cup semisweet chocolate chips (non-dairy, gluten free)
  • 2 tbsp finely crushed candy canes 

Instructions:

  1. Preheat the oven to 350 degrees.
  2. Lightly grease a 12 slot standard size muffin pan.
  3. Prepare the flax egg in a food processor.
  4. Pulse the flax egg a couple of times and let it rest for a few minutes.
  5. Add the remaining ingredients, except the candy canes, peppermint extract and chocolate chips.
  6. Puree for about 3 minutes. Scrape down the sides as needed. Make sure it is smooth.
  7. Add the peppermint extract a little at a time. Pulse. Sample the mixture to make sure it is to your liking.
  8. Distribute the batter into the muffin pan. Smooth the tops with a spoon.
  9. Bake for 21 to 26 minutes, or until the tops are dry and the edges start to pull away from the sides.
  10. Remove the pan from the oven and let it cool for 20 to 30 minutes. These will be tender, so be sure to remove them gently from the pan.
  11. Dust the top of the muffins with crushed candy cane and serve them immediately. You can also top them with whipped coconut cream.
  12. Enjoy!

Black beans also help to manage weight by controlling your cravings as well as keeping you full for longer. Just half a cup of cooked black beans contains 8 grams of protein!
