These raw and natural gingerbread cookies are a simple recipe that you can whip together in minutes and enjoy all throughout the holiday season.

Medjool Dates

How To Make No Bake Vegan Gingerbread Cookies

Ingredients:

  • 1 ¼ cup Medjool dates, pitted and packed
  • ¼ cup almond meal
  • ¼ cup buckwheat groats
  • ¾ cup rolled oats
  • 1 tbsp cinnamon powder
  • 1 tsp ginger powder
  • ½ tsp nutmeg
  • ¼ tsp vanilla
  • ¼ tsp cloves 

Instructions:

1. In a high-speed blender, process all of the ingredients except the dates to create a flour.

2. Add in half the dates and process until blended.

      • Add the rest of the dates to create a dough.

3. Scoop 1 tablespoon of the dough and roll in into a ball (or flatten to make cookies).

Do you prefer extra chewy cookies? If so, place the dough into a dehydrator at 115 Fahrenheit for 2 hours.

Storage: Keep in the refrigerator in lidded container for up to 5 days.

These easy-to-make cookies are a fantastic holiday treat that you can make in advance to have on hand when friends and loved ones stop by to share some holiday cheer.
