There are people who know how to bake and create amazingly delicious cookies.

AND then there is the rest of us, whose cookies resemble hockey pucks (black and hard).

But don’t worry… if you and baking don’t mix, I have the perfect solution for you =  No-Bake Coconut Cookies!

These simple and healthy cookies are nearly impossible to mess up. Plus, they are packed with good-for-you ingredients such as coconut, flax seeds and raw honey. Better yet, they don’t have any strange ingredients that are impossible to pronounce (like most store-bought cookies).

Whether you use them as a sweet and healthy treat for your kids or you share them with your coworkers, these cookies will be a crowd pleaser.

Here is how you can whip up a batch:

Serves: 18 cookies
Ingredients
  • 2 ½ cups gluten-free quick oats
  • 1 cup unsweetened, flaked coconut
  • ⅔ cup raw honey
  • ½ cup unrefined coconut oil
  • 1 cup almond butter
  • 1 tbsp whole flaxseeds
  • 2 tsp vanilla extract
  • 6 tbsp dark cocoa powder
  • Coconut sugar - sprinkle on top
  • Himalayan pink salt - sprinkle on top
Instructions
  1. Line two baking sheets with parchment paper.
  2. In a large bowl, thoroughly mix the coconut flakes and oats.
  3. In a medium pot over medium heat, combine the honey, coconut oil and almond butter and stir until the mixture is melted and mixed evenly.
  4. Remove from heat and add the oats and coconut flakes, stirring continuously.
  5. Add the flax seeds, vanilla extract and cocoa powder and continue stirring until mixture becomes thick.
  6. Scoop out large tablespoons of the mixture and place on the cookie sheets.
  7. Lightly sprinkle coconut sugar and sea salt on top of each cookie.
  8. Freeze the cookies for at least 20 minutes (or when you are ready to serve).
  9. Take the cookies out of the freezer to thaw for 5 minutes.
  10. Share and enjoy (store any leftover cookies in a sealed container in the freezer)!
