Need A Totally Healthy Dessert? Try Some Mango Sorbet With Coconut Milk

Mangoes are one of the world’s most consumed fruit. They’re sweet, juicy and have a wonderful creamy flavor. On top of being juicy and sweet, there are so many amazing things that they can do for your body, such as help with digestion and weight loss. And just these two things alone can make mangoes a great snack.

Let’s take a look at a few other things that mangoes can do for your body!

Prevent Asthma. For those who suffer from asthma, eating mangoes on a regular basis can help control and prevent having an asthma attack. Consuming foods that are high in beta-carotene, which mangoes are, can help prevent you from having an asthma attack. Mangoes contain 25% of vitamin A, also known as beta-carotene, that you need each day.

Provide Bone Health. Mangoes are also high in vitamin K. Vitamin K aids in the role of keeping calcium in your bones. Therefore, vitamin K is needed to prevent bone breaks and fractures and to ensure that your bones are healthy.

Lowers High Cholesterol Levels. Mangoes contain fiber, pectin and a high level of vitamin C, all of which work together to help lower high “bad” cholesterol levels. The potassium that is also found in mangoes works to help lower your risk of heart disease. Potassium helps to control your heart rate and blood pressure.

Helps With Weight Loss. The fiber that also lowers your high cholesterol levels helps  with weight loss as well. The fiber helps to keep you feeling fuller for longer. It also helps in boosting your digestive system and helps in burning off additional calories in your body.

Eye Health. Your eyes need vitamin A to stay healthy. Mangoes are loaded with vitamin A. Not only does vitamin A help keep your eyes healthy, but it also helps to fight against macular degeneration, preventing night blindness as well as keeping them moist and fighting against dryness.

Mango Sorbet

Ingredients:

  • 1lbs chunks of frozen mango
  • Handful of dried mango
  • 1-2 tbsp of coconut sugar 

Instructions:

1. Place the frozen mango chunks and coconut sugar into a high-speed blender and blend until smooth like ice-cream.

2. Scoop out the blended mango and place into a freezable container.

3. Mix in the dried mango pieces evenly. Place the container with the mango sorbet into the freezer for about 20 minutes as it may be too soft to serve after coming out of the blender.

4. After 10-20 minutes, the mixture should be just right. If it is still soft, leave for another 15 minutes or so. If it is too hard, let it stand on the counter for 5 minutes or until you can scoop out 3 scoops to use for this recipe.

5. Place scoops into tall glass ready for frothy coconut milk.

Coconut Milk

Ingredients:

Instructions:

1. Place the can of coconut milk in the fridge for at least 2 hours, preferably overnight if possible. This will allow for the creamy part of the coconut to separate from the watery part.

2. Open the can and ensure that you only use the creamy part. Drain the watery part away.

3. Mix in 1 tablespoon of maple syrup. Taste for sweetness. Add another tablespoon if you find it not sweet enough.

4. Mix with a handheld mixer until the coconut milk becomes nice and frothy, for about 10 minutes or so.

5. Pour the frothy coconut milk over the 3 scoops of mango sorbet and serve with a straw and spoon.
