Whether you are a morning person or not… finding the time to cook up a healthy breakfast can be a challenge!

Between getting ready for work, preparing the kids for school, or just peeling yourself out of your snuggly cocoon of a bed, mornings pose a special set of obstacles to overcome.

You can make your mornings easier by spending a few minutes the night before to prep a nutritious (and utterly delicious) breakfast.

So maybe you’ve already jumped on the overnight oats bandwagon (an excellent choice)… but there is a new breakfast in town – overnight QUINOA!

How To Make Overnight Quinoa
  • 1 cup cooked quinoa
  • ½ cup unsweetened almond milk
  • ¼ cup Greek yogurt
  • 1 tbspchia seeds
  • 1 tsp raw honey
  • 1 tsp vanilla extract
  • Your favorite fruits: berries, banana, apples…
  1. In a glass jar with a lid, mix ALL of the ingredients together.
  2. Stir well and place the lid on the jar.
  3. Put the jar in the refrigerator for at least 4 hours (or overnight).
  4. When ready to eat, remove from the fridge and place some of your favorite fruits on top!
