Benefits Of Tomato Bacon Soup

Did I forget to mention that this BACON soup has health benefits? **HIGH FIVE**

Tomato
  • Excellent source vitamin C, biotin, molybdenum and vitamin K
  • Good source of copper, potassium, manganese, dietary fiber, vitamin A, vitamin B6, folate, niacin, vitamin E and phosphorus
  • Contain an incredible amount of antioxidants
Turkey Bacon
  • Packed with protein
  • Provides vitamin B complex nutrients
  • Tip: Choose a low-sodium variety
  • Lower fat content than pork bacon
Onion
  • Helps improve immunity
    • The phytochemicals in onions along with their vitamin C
  • Onions contain chromium
    • Assists in regulating blood sugar
  • Reduces inflammation and helps infections
Garlic
  • Contains a compound called allicin, which has potent medicinal properties
  • Boosts the function of your immune system
  • Highly nutritious with few calories
  • Contains manganese, vitamin B6, vitamin C, fiber, selenium, calcium, copper, iron, phosphorus and vitamin B1
  • Helps prevent and reduce common illnesses

Tomato Bacon Soup

Ingredients:

  • 10 slices organic turkey bacon
  • 2 tbsp unsalted grass fed butter
  • 1 large sweet onion, chopped
  • 2-3 garlic cloves, minced
  • 8 cups fresh tomatoes, diced (skins on)
  • 2 tbsp smoked paprika
  • Sea salt & pepper to taste

Instructions:

1. In a large frying pan over medium-high heat, cook the bacon.

      • Turn once, about 6-8 minutes.
      • Transfer to a paper towel.
      • Allow to cool and crumble the bacon into small pieces.

2. Melt the butter in the pan.

      • Sauté the chopped onion and garlic for about 5 minutes, until slightly browned and softened.

3. Add the diced tomatoes to the onion mixture and bring to a boil.

      • Reduce the heat and simmer for 20 minutes.
      • Remove from the heat, allowing the tomato mixture to slightly cool.

4. Puree the soup in a blender (work in batches, 2 cups at a time).

5. Return the pureed tomato mixture to the large frying pan.

      • Add paprika and salt and pepper to taste.
      • Return the soup to a boil, then turn off the heat.

6. Taste and adjust the seasoning to your preferred flavor.

To Serve: Pour into bowls and add a crumbled bacon piece on top.
