Today, my friend and fellow health and wellness extraordinaire, Abbey Gibb – holistic nutritionist and founder of the lifestyle network, – has an exciting trendy recipe that will give you exactly the nutrients you need in the morning! So excited to have her with us for another Saturday Strategy.

Today we are talking about eating cookies for breakfast! Not only that, but with these cookies you can actually burn fat and lose weight! What?!

Are these ingredients full of some sort of magic? Maybe. In this recipe we use Organifi Complete Protein and one other superfood ingredient… quinoa flour.

I’m sure by this point you’ve at least heard of quinoa. Maybe you’ve even used it in your kitchen! Quinoa can also be made into flour and baked into delicious gluten-free treats!

Quinoa Flour Benefits

Quinoa is a protein and nutrient-dense seed (not a grain at all!) that makes a great substitute for traditional grains. It is an excellent source of plant protein and is becoming more and more common in protein powders.

Why do I love using quinoa flour so much? Let me show you. Here are the many benefits of quinoa:

Complete Protein Source: Quinoa is a complete protein, meaning it contains all 9 essential amino acids. A lot of plant-based proteins are lacking lysine, which is why people often turn to animal-based proteins. Quinoa, however, contains lysine as well as the other 8 amino acids that aren’t made by the human body.  

Energy Source: Quinoa is full of energy-enhancing B-vitamins.

Suppress Appetite/Support Weight Loss: Quinoa contains equal amount of protein and fiber for appetite suppression.

Reduces Inflammation: Quercetin, a trace mineral in quinoa, has been studied for its inflammation reducing effects. The bulk of illness we see today is due to chronic inflammation and a diet high in inflammatory foods.

Anti-Cancer: The trace mineral quercetin has also been studied for its anti-cancer abilities and has been called a “promising agent” for cancer prevention. Quinoa has one of the highest amounts of quercetin found in plants.

Antiviral: Research has found that flavonoids, such as those found in quinoa, work as natural antivirals.

Gluten-Free: According to recent surveys, around ⅓ of Americans are avoiding and/or trying to avoid gluten. Quinoa is gluten free and easy on the digestive system. Using quinoa in place of other gluten-free agents has been found to dramatically increase antioxidants and nutrients in one’s diet.

Blood Sugar: Quinoa has a low glycemic index, which means it doesn’t cause blood sugar to spike quickly. This makes it a good choice for those with diabetes or those struggling with high blood sugar.

Antioxidants: When you think of antioxidants you probably think of berries and superfoods, not grains and seeds. Quinoa is surprisingly high in antioxidants, ranking the highest when compared to other pseudocereals, legumes and cereals. Antioxidants are vital to keeping the body free of oxidative damage and disease.

Best Sugar Substitutes For Baking

We all know sugar is the root of all evil when it comes to cravings, weight gain and illness. But you really don’t have to deprive your sweet tooth if you know the right substitutes to use! They only taste slightly different than conventional sugar (many people don’t notice the difference) and once you eat them regularly you won’t miss sugar a bit.

Here are my sugar substitutes of choice:

  • Coconut sugar – low glycemic index (won’t spike blood sugar levels)
  • Stevianatural, zero-calorie sweetener
  • Monk fruit300-400 times sweeter than cane sugar, zero calories, no effect on blood sugar


Why Protein For Breakfast

It is really important to get protein in the morning because it helps to:

  • Balance blood sugar levels (prevent spikes)
  • Decrease your appetite


Because you’ve been fasting all night, the first foods you eat in the morning have the potential to really spike your blood sugar. This can lead to weight gain, etc.

One of your important food-related hormones is ghrelin. This is what tells your body it’s hungry. The only way to quiet it down easily and for a decent amount of time is with protein and fiber. When you eat a granola bar or a bowl of cereal, am I right that you start feeling hungry again 1-2 hours later? Way before lunch! And so you snack and consume way more food than you probably intended.

If you eat enough protein in the morning, it helps to balance your blood sugar so you don’t experience a spike and also keeps you more satiated until lunch.

Gluten-Free Quinoa Protein Cookies
  • ½ cup quinoa flour
  • 2 scoops Organifi Complete Protein
  • 2 eggs (vegan option: 1 tbsp flax seeds w/2 tbsp water)
  • ½ cup coconut oil
  • ¼ cup coconut sugar
  • Pinch of himalayan sea salt
  • Pinch of baking soda
  • Cinnamon
  • Raisens
  • Chocolate chips
  1. Whisk all ingredients together.
  2. If mixture is too thick, add a little water until you reach desired consistency.
  3. Roll them into balls.
  4. Plop onto baking sheet.
  5. Bake at 325 for 10 minutes.
