It’s all about changing up the ingredients to incorporate powerful superfoods that not only do your body good – but also do WONDERS for your health!

One green ingredient you can add to your muffins to make then marvelously healthy is KALE.

How To Make Kale Muffins


This tasty recipe is compliments of the creativity of GlutenFreeMama.

  • Preheat oven to 350 degrees Fahrenheit.
  • Wash kale and remove stems.
  • In a food processor, place ALL of the ingredients and blend on high until thoroughly mixed.
      • Scrape down sides as needed.
  • Line a muffin pan with 6 paper cups and fill them with the muffin mixture (almost to the top).
  • Bake for 30 minutes or until a toothpick comes out clean from the center of the muffin.
    • Remove the muffins from the pan and allow to cool.

Eat while warm for the best flavors or store them in your freezer and reheat when needed!

Makes 6 muffins.

  • ½ cup finely chopped kale
  • 3 eggs
  • ⅓ cup quinoa
  • ½ cup mozzarella cheese, shredded
  • ½ tsp garlic salt
  • Optional: your favorite breakfast meat chopped into small pieces
  • Preheat oven to 350 degrees Fahrenheit.
  • In a small pot, combine the quinoa with ⅔ cup water and bring to a boil.
      • Cook for 10 minutes.
  • Place the cooked quinoa in a large bowl and then add the eggs, cheese, kale and garlic salt.
      • Mix together until well combined.
  • Pour the mixture into greased muffin tins (use olive oil).
  • Bake for 20 minutes or until golden.
    • Let cool for 10 minutes and then remove from muffin pan.
