You know those yellow weeds that seem to speckle everyone’s yard? Those are dandelions and they actually have more to offer than you might think, more specifically their greens.
Dandelion greens may be bitter, but they are some of the most nutrient-rich greens you can find. There are packed with vitamins such as vitamins A, C, E and K, iron and calcium and are best known for their ability to help with detoxification and boosting liver function. They can also help ease the digestion process and boost your immune system.
Now don’t go out into your yard and start munching on those greens just yet (a decision I’m sure you’d regret). There are several ways to make these bitter greens enjoyable. You can saute them, add them to salad, or mix them into past dishes. One of the best ways to enjoy them though is simply juicing them.
This is a dandelion green juice recipe with a very earthy taste that, if you don’t enjoy, you can sweeten up with some fruit of your choice (I’d suggest an apple).
Dandelion Greens Juice
This recipe doesn’t call for super specific amounts of any ingredient, which leaves it open for you to experiment and find a balance that you like.
- A couple celery stalks
- Ginger root
- Turmeric root
- Dandelion greens
- Half a tomato
- Beet greens
- Apple (optional)
Instructions: Process all ingredients through your juicer and enjoy immediately.
