Juicing Carrots

Carrots are one of the sweetest vegetables and can taste great in just about any juice recipe. The antioxidant beta-carotene is what gives carrots their bright orange color and makes them excellent for helping to prevent oxidative stress in the body. They are also full of vitamin A (1 serving gives you 203% of your daily need!) and have a little vitamin C. Select carrots that are firm, smooth and bright colored. Avoid cracked or dull looking carrots. Feed carrots into the juicer end first.

Juicing Celery

Celery juicing recipes are widely used as a diuretic and are great for cleansing. Celery is rich in sodium and potassium, and is great as a post workout drink to replenish the body of these nutrients. Celery also contains coumarins, which have anticancer properties and may help lower blood pressure and ease migraines.

It is important to wash celery ribs thoroughly. Select celery that is light green and firm. A key way to see if the celery is fresh is that the ribs should snap, not bend.

Celery is used as a base in many vegetable juices. It tastes amazing, is light and has a “cooling” effect when you drink it. Thus, you can add celery ribs to many of your favorite juicing recipes for a great base.

Juicing Cilantro

Cilantro juicing recipes are packed with great nutrients. Research suggests that cilantro lowers LDL (bad cholesterol). Cilantro also has antioxidant properties, calcium, manganese, iron, folic acid, riboflavin, niacin, vitamin A and vitamin K. Wow!! It’s also a great detoxifier and can help eliminate heavy metals from the body.

Choose cilantro that is fresh and green, avoid cilantro that looks brown or wilted.

Add a handful of cilantro to any of your favorite drinks.

Juicing Cucumbers

Cucumbers make a great base for most juice recipes. The skin of cucumbers are composed of many minerals, like copper, potassium, manganese, phosphorus, magnesium, biotin and silica. Silica helps our connective tissue stay strong and hold our body together. Silica is also found in intracellular cement, muscles, tendons, ligaments, bone and cartilage.Cucumber juice also helps with skin complexion. When juicing cucumbers, choose ones that are medium to dark green and firm.

Juicing Fennel

Fennel belongs to the same umbelliferous family of carrots, parsley and celery. Fennel has many medicinal and nutritional properties and is often used for digestive upset, relieving gas issues, toning and strengthening the stomach and relieving stomach pain. Fennel also has phytoestrogen compounds, which may help with menopausal symptoms. Like celery it is also high in coumadin.

Choose fennel that have the stems intact.

Be forewarned, fennel has a strong licorice taste!

Juicing Garlic

Garlic is an absolutely amazing medicinal food! It can be used for coughs, colds, toothaches, dandruff, cleansing, etc. Research conducted has shown that garlic lowers blood sugar, eliminates lead in the body, has detoxification properties, strengthens the immune system, and has anticancer, antibacterial and antifungal properties. Garlic has sulfur containing compounds such as allicin (also responsible for the potent odor of garlic), diallyl trisulfide and others that have a therapeutic effect on the body. The best way to take garlic is raw. When garlic is cooked, it loses some of its nutritional value. Research suggests that 3 cloves of garlic are recommended per day for optimal benefit.

The best garlic to buy is fresh and firm. Avoid garlic that has evidence of decay or mildew.

Juicing Ginger

Ginger, much like garlic, has a wide variety of uses. It is often used to promote the release of intestinal gas and bloating. Ginger also helps with sea sickness, dizziness, cold sweating, inflammation, nausea and vomiting. It is also a powerful antioxidant.

Select fresh ginger that looks fresh. Store ginger in the refrigerator (no need to put in a bag).

Juicing Lettuce

The darker the lettuce, the higher concentration of nutrients. Romaine lettuce has more nutrient content than loose-leaf, butterhead and iceberg. Select lettuce that is fresh and crisp.


Juicing Onions

Onions and garlic decrease blood lipid levels, prevent blood clots and help to lower blood pressure. Onions contain a compound called allylpropyl disulphide (APDS), which has been shown to lower blood sugar levels. Another great benefit of onions is that they help with asthma due to their ability to relax bronchial muscles, which decreases bronchial spasms.

Select onions that are firm with dry skin. Onion juices are often too strong to consume alone but can make a great addition to your green juice.

Juicing Parsley 

So far, there have been many juices that incorporate parsley. Parsley juicing recipes are rich in carotenoids and chlorophyll. Parsley is also packed with vitamin C, and flavonoids that inhibit cancer causing properties of fried foods. Parsley is often called a “nerve stimulant” because it increases your awareness and energy. So put down the energy drink and juice parsley instead!

Pick parsley that is fresh and green. Stay away from wilted or yellow parsley. Parsley juice alone is very strong, but the good news is that you can add parsley to any juice!

Juicing Bell Peppers

Bell peppers are one of the most nutrient-dense vegetables that you will find and are packed with vitamin C. Red bell peppers also have higher levels of nutrients compared to green bell peppers. According to research, bell peppers contain substances that have been shown to prevent blood clot formation, which reduces chances of heart attack and stroke.

Select fresh, firm and bright bell peppers. One thing to remember when juicing bell peppers is that organic is the way to go! (actually, this is the case with all produce, but refer to this list for more info).

Juicing Spinach

Spinach juicing recipes are packed with powerful nutrients. Spinach has fiber and flavonoids, which have anticancer and anti-inflammatory properties due to neoxanthin and violaxanthin, which lowers blood pressure. They are also packed with vitamin A, which helps with immunity and skin complexion, as well as vitamin K.

Choose dark green and fresh spinach. Add a handful of spinach to any juice!

Juicing Sweet Potatoes

Sweet potato juicing recipes have vitamin B6, which breaks down homocysteine. Homocysteine is a compound that damages blood vessels. Research suggests that people with heart attacks have high levels of homocysteine in their blood vessels.

Research has shown that vitamin B6 reduces the risk of heart disease. Sweet potatoes are also packed with potassium, which control blood pressure and are rich in fiber, which helps you to feel full for longer periods. Sweet potatoes have a slow digestion rate due to their fiber content and are considered a complex carbohydrate, which in turn stabilizes an individuals insulin levels.

Choose sweet potatoes that are firm with no signs of decay. If you prefer sweeter tasting sweet potatoes, then choose darker sweet potatoes.

Wheat Grass

What’s inside:
Chlorophyll, magnesium, vitamins A, B, C E, K, 8 essential amino acids, protein, iron

In the early 1900’s a young Hungarian philologist/linguist claims to have found and translated an ancient biblical manuscript that teaches about the laws of health. He later converted this manuscript into mini books, one of which states “all grasses are good for man, and wheatgrass is the perfect food for man”.

In the 1940’s Ann Wigmore reportedly cured herself of cancer by using grasses and weeds she found in Boson. She then began to study natural healing and holistic medicine, eventually opening an institute in Boston where she is still teaching about grasses and healing from illness. By the 1970’s thanks to Ann and several other scientists, wheatgrass became popular in the U.S. as a superfood and tonic.

Health Benefits:
Wheat grass is rich in chlorophyll; a green-pigmented molecule that gives plants power to absorb energy from the sun. It is the foundation for photosynthesis, and also called the first product of light. Studies have shown that chlorophyll helps to control hunger cravings, body odor, relieve swelling and redness from infections, promote cleansing and healing in the body, and even protect DNA against fried foods.

In a study done by the United States Army, Guinea pigs who ate chlorophyll-rich diets were exposed to lethal doses of radiation. These guinea pigs experienced half the mortality rate than those guinea pigs who were given a non-chlorophyll rich diet .

The chlorophyll in wheatgrass may also help those with anemia or other blood-related disorders. Animal studies have shown that administration of wheatgrass returns red cell count back to normal in animals with anemia within 4-5 days.

Antibacterial and antioxidant properties: At the University of Pune in India researchers evaluated wheatgrass and found that it has extremely high levels of antioxidants when compared to other vegetables. Another study in India showed that wheatgrass plays a beneficial role in bettering hyperlipidemia (don’t worry I had to look that one up too..it basically means an excess of lipids in the blood, or high cholesterol).

A few other studies I found show that wheatgrass may: decrease symptoms of ulcerative colitis, aid with symptoms from post-chemotherapy, and be a potential alternative supplement for leukemia patients.

How to eat them:

The most popular way to eat wheatgrass is to juice it. If your body is mostly acidic (the result of eating too much acidic food) it is said wheatgrass will taste bitter. Otherwise it can actually be pretty good! I’ve even thrown full wheat grass stems into my smoothies.
